Fish Head Stock with Brochettes

Soup Stock

  • 2 fish heads, leak, celery, onion, salt and pepper

  • Add enough water to cover, bring to a boil and simmer until desired flavor (can be easily over cooked)

  • Garnish with cabbage and red bell pepper

  • Sturgeon steak from tail section of fish

  • Two fish heads should make approximately one and a half gallon of fish stock
