Sturgeon is much more than just caviar.
Situated in the shadows of Crater Lake National Park, Oregon Royal Sturgeon Company is a family-owned and operated White Sturgeon hatchery and processing facility. We believe the culinary products this ancient fish offers are so much more than the roe it produces as it offers a unique mild taste with a meaty texture. The “cold water finishing” of our sturgeon recreates nature’s cold river flows from snow runoff that add firmness and texture to the meat. This has lead to our sturgeon being served in some of the finest restaurants in the country where talented chefs utilize the full spectrum of preparation options.
Our White Sturgeon come from domesticated White Sturgeon bloodlines that were carefully removed from California’s Sacramento River nearly forty years ago under permits issued by the California Department of Fish & Wildlife. The sustainable production of these sturgeon has the potential to reduce the fishing pressure of the wild fish stocks while producing fish that are raised in waters that are continually monitored for the optimum health of the fish. No hormones or chemicals are ever used in the growing of our fish.

Our small group raises, harvests, cuts, packages and transports every fish we sell. We are involved at every step of our sturgeon’s journey to ensure a premium product reaches your kitchen.
Amazing taste.
With the taste of halibut or walleye and the dense texture of swordfish or shrimp, White Sturgeon are boneless, have no scales and represent a unique creature in the culinary world. A simple grilling of the fish without spice of any kind brings out a clean, mild taste that continually seems to delight the first time taster.
As can be seen in our Gallery of pictures, the meat and fat visible while raw, turns white once cooked and it’s meaty texture holds it consistency as it’s cut with a fork. The cartilage rib cage dissolves when the fish is first iced and then cooked leaving only a small bit of the backbone on the serving plate.
Grown sustainably.
Our sturgeon are raised in circular tanks utilizing state-of-the-art technology and facilities that do not touch or diminish the natural water of our streams or lakes in any way.
Our families live within a quarter of a mile of the hatchery which utilizes a computerized fish health monitoring system that checks water quality, oxygen levels, temperature and tank water levels continuously. Should any of the fish health parameters be exceeded the computers phone our homes at night and set off alarms during the day. The health of our fish is paramount.
Premium quality.
The team at Oregon Royal Sturgeon Co. controls each step in our Sturgeon’s lifecycle. We are personally involved with the annual Spring hatch of tens of thousands of eggs followed by three years of hand raising the fish until they reach the market size of 10 to 15 pounds. From hatching the fry through FDA and ODA licensed processing; our customers can depend upon consistent, unsurpassed quality.
